1. Beef Tapa has since been made popular by the Filipino breakfast TAPSILOG - a combination plate of TAPa, SInangag(Fried Rice) and ItLOG(Egg). It is served with a side of sliced tomato or a spicy vinegar dipping sauce.
2. This Paksiw na Pata recipe is a Filipino original dish made by braising ham hocks in a vinegar, soy sauce and sugar mixture until they're tender and the sauce is gelatinous and thick.
Unlike Pata-tim, which uses a whole pig's leg or Pata, the ham hock for this particular dish is just the front section of the leg of the pig.
3.The pork bistek is a variant of the Bistek Tagalog, or a sauced lean beef dish with calamansi or lemon juice and soy sauce.
Potatoes are cubed, just like the pork and liver and the bell pepper is added towards the end so it doesn't get wilted too much. Bistec, spelled with a c rather than k, actually means Steak in Spanish. Lean cuts of pork sliced thinly is marinated in a tangy and salty mixture of lemon juice and soy sauce.
And just in the Beef bistek, onions cut into rings and used as topping.
The tangy taste depends on how long it has been marinating in the lemon/soy sauce mixture.
4. This Menudo Filipino Recipe is made with chunks of pork and liver cooked in tomato sauce with potatoes, chickpeas, green peas and bell pepper.The deep red color of the dish is from achuete or annato seeds.

5. The Filipino barbecue is made from pork sliced thinly, skewered on a bamboo stick, and usually cooked over charcoal.
What we call Filipino pork barbecue are known as Pork Kebabs, or skewered meat by most other cultures.
Sweet, salty, and not-so-tangy, it uses a wet marinade of soy sauce, sugar, a can of lemon-lime flavored softdrink (7-up), chili peppers and a generous amount of garlic.
The marinade is then mixed with banana catsup for basting during grilling.
